Almond-Mint Pesto

  1. In a food processor, pulse mint, roasted salted almonds, garlic, freshly grated lemon peel, fresh lemon juice, and salt and pepper until coarsely chopped.
  2. With the processor running, add extra-virgin olive oil; puree until coarsely ground.
  3. Toss with 1 pound cooked pasta or serve with grilled chicken.
