Minted Mediterranean Beef Salad
- 1/4 cup lemon juice Safeway 4 ct For $5.00 thru 02/09
- 2 Tbsp. GREY POUPON Dijon Mustard
- 1/4 cup chopped fresh parsley
- 3 Tbsp. chopped fresh mint
- 1 Tbsp. lemon zest Safeway 4 ct For $5.00 thru 02/09
- 2 tsp. minced garlic
- 1/4 cup olive oil
- 1/4 cup vegetable oil
- 1 boneless beef sirloin steak (1-1/2 lb.), 1 inch thick Whole Foods 1 lb For $7.99 thru 02/09
- 4 cups cooked couscous
- 1 cup chopped roasted red peppers
- 1 pkg. (4 oz.) ATHENOS Traditional Crumbled Feta Cheese
- 1/2 cup sliced Kalamata olives
- 2 large tomatoes, sliced
- 1 cucumber, sliced
- Whisk first 6 ingredients in medium bowl until blended; gradually whisk in oil.
- Place steak in shallow dish.
- Brush 1/4 cup mustard mixture over steak; turn to evenly coat both sides of steak.
- Refrigerate 2 hours to marinate.
- Heat grill to medium heat.
- Grill steak 4 to 6 min.
- on each side or until medium doneness (160F).
- Remove steak from grill; let stand 5 min.
- Meanwhile combine couscous, peppers, cheese, olives and remaining mustard mixture; spoon onto platter.
- Cut steak across the grain into thin slices; arrange over couscous mixture with tomatoes and cucumbers.
