Minted Mediterranean Beef Salad

  1. Whisk first 6 ingredients in medium bowl until blended; gradually whisk in oil.
  2. Place steak in shallow dish.
  3. Brush 1/4 cup mustard mixture over steak; turn to evenly coat both sides of steak.
  4. Refrigerate 2 hours to marinate.
  5. Heat grill to medium heat.
  6. Grill steak 4 to 6 min.
  7. on each side or until medium doneness (160F).
  8. Remove steak from grill; let stand 5 min.
  9. Meanwhile combine couscous, peppers, cheese, olives and remaining mustard mixture; spoon onto platter.
  10. Cut steak across the grain into thin slices; arrange over couscous mixture with tomatoes and cucumbers.
