Cheeseburger Onion Pie
- 1 Tbsp. vegetable oil
- 1 lb. onions, sliced and quartered
- 1 lb. ground beef
- 1/3 c. ketchup
- 2 tsp. prepared mustard
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 2 (8 oz.) cans refrigerated crescent rolls
- 1 c. shredded Cheddar
- 2 eggs, beaten
- 1 egg yolk, beaten
- 1 Tbsp. water
- In 10-inch skillet over medium heat, heat oil.
- Stir in onions, cover and cook 10 minutes, stirring occasionally.
- If onions begin to stick, add 2 tablespoons water.
- Remove from skillet; set aside.
- Brown beef; drain fat.
- Stir in ketchup, mustard, salt and pepper and set aside.
- Unroll 1 can of rolls and press together perforations.
- Roll out to a 12-inch square.
- Line a 9-inch pie pan.
- Trim 1 inch beyond edge of dish.
- Spoon meat into pie shell.
- Sprinkle with cheese; top with onions.
- Pour 2 beaten eggs over top.
