Baked Spinach Country Style

  1. Cook spinach in boiling, salted water until tender; drain thoroughly in sieve.
  2. Meanwhile, cook onion in 3 tablespoons butter until soft.
  3. Stir in flour, then milk.
  4. Cook, stirring constantly, until mixture comes to a boil.
  5. Remove from heat and add eggs, salt and pepper.
  6. Stir in spinach.
  7. Place in greased 1 1/2-quart casserole.
  8. Toss cracker crumbs with melted butter, then cheese.
  9. Sprinkle over top of casserole.
  10. Bake in moderate oven (350u0b0) for 25 minutes or until bubbling.
  11. Makes 6 servings.
