Cajun Squash
- 10 zucchini, sliced
- 10 yellow squash, sliced
- 1/4 c. butter
- 1 medium onion, sliced
- 2 stalks celery, diced
- 1 bell pepper, diced
- 1/4 c. chopped garlic
- 1/2 lb. diced andouille or other smoked sausage
- 1 lb. ground beef
- salt and cayenne pepper to taste
- 2 c. seasoned Italian bread crumbs
- Steam zucchini and yellow squash in pot of boiling water until tender; drain, set aside and keep warm.
- In 5-quart pan, melt butter over high heat.
- Add onions, celery, bell pepper, garlic and andouille.
- Saute until onion is wilted (5 to 7 minutes).
- Add ground beef; blend well until beef is well browned, about 30 minutes.
- Season well with salt and cayenne pepper.
- Add squash and mix.
- Bring to a slight simmer; cook about 20 minutes.
- Adjust seasonings and remove from heat.
- Add bread crumbs; mix well and place in a casserole dish or large baking pan.
- Bake at 350u0b0 until slightly browned.
- Serves 12 to 15.
- Cut in half for home use.
