Cajun Squash

  1. Steam zucchini and yellow squash in pot of boiling water until tender; drain, set aside and keep warm.
  2. In 5-quart pan, melt butter over high heat.
  3. Add onions, celery, bell pepper, garlic and andouille.
  4. Saute until onion is wilted (5 to 7 minutes).
  5. Add ground beef; blend well until beef is well browned, about 30 minutes.
  6. Season well with salt and cayenne pepper.
  7. Add squash and mix.
  8. Bring to a slight simmer; cook about 20 minutes.
  9. Adjust seasonings and remove from heat.
  10. Add bread crumbs; mix well and place in a casserole dish or large baking pan.
  11. Bake at 350u0b0 until slightly browned.
  12. Serves 12 to 15.
  13. Cut in half for home use.
