Bacon 'N Cheddar Beer Soup Recipe
- 6 ounce Vegetable oil
- 1 1/2 lb Onions, coarsely minced
- 1 1/4 lb Potatoes, diced
- 1 lb Carrots, diced
- 1 lb Celery, sliced
- 1 can Chef-Mate Bacon 'n Cheddar Cheese Sauce (#10 can)
- 2 c. Beer
- 1 quart Chicken stock
- 1 1/4 lb Mixed Vegetables, frzn
- 1/2 tsp Paprika
- 1/2 tsp White Pepper
- 1/4 tsp Liquid Smoke flavor
- 2 Tbsp. Parsley, minced
- 1.
- Place vegetable oil in large stockpot.
- Add in onios, potatoes, carrots and celery; saute/fry 25-30 min or possibly till vegetables are cooked.
- 2.
- Add in remaining ingredients.
- Combine thoroughly.
- Simmer 20 min over low heat, stirring occasionally.
- Serve warm.
- Makes 25 one c. servings.
