Low Fat Fettuccini

  1. Cook fettuccini in boiling water in large uncovered pot until tender but firm, about 9 to 11 minutes.
  2. Drain.
  3. Return fettuccini to pot.
  4. Meanwhile, heat margarine in frying pan.
  5. Add peas and red pepper.
  6. Saute about 4 minutes until tender.
  7. Sprinkle with flour.
  8. Mix.
  9. Stir in skim milk until it boils.
  10. Pour over drained fettuccini.
  11. Divide into 6 portions.
  12. Sprinkle with parmesan cheese.
  13. Makes 9 cups.
