Lamb Skewers (Greek)

  1. Cut lamb or chicken into bite-size pieces and thread on eight 12" skewers.
  2. Mix the lemon juice, oil, and oregano in a shallow pan.
  3. Make sure it is large enough for the skewers to lie inches Season with salt and add skewers.
  4. Cover and refrigerate 2 hours.
  5. On a very hot grill (or in a cast-iron pan over medium-high heat), cook skewers, basting frequently and turning occasionally, for 710 minutes.
  6. I serve it with a feta-mint mix with the cucumbers, and onions on the side.
  7. Feel free to serve it in a pita with the tomatoes, cucumbers, and onions!
