Christopher Jollief'S Peanut Brittle

  1. Butter 2 baking sheets; keep warm.
  2. Combine soda, 1 teaspoon water and the vanilla; set aside.
  3. Combine sugar, 1 cup water and the corn syrup in a large saucepan.
  4. Cook over medium heat, stirring occasionally, to 240u0b0 on candy thermometer (or until small amount of syrup dropped into very cold water forms a soft ball, which flattens when removed from water).
  5. Stir in butter and peanuts.
  6. Cook, stirring constantly until thermometer reaches 300u0b0 (or until small amount of mixture dropped into very cold water separates into threads, which are hard and brittle).
  7. Watch carefully so the mixture doesn't burn.
  8. Immediately remove from heat.
  9. Stir in soda mixture and mix thoroughly.
