Chili Lime Chicken

  1. In a bowl, add olive oil, zest and juice of 1 lime, red chili, garlic, and mint.
  2. Stir to combine.
  3. Place chicken thighs in a oven dish and pour marinade over chicken.
  4. Place in the refrigerator and marinade 3060 minutes.
  5. Preheat oven to 170 degrees C (340 degrees F).
  6. Heat a pan over high heat.
  7. When ready, sear chicken in pan, skin side down.
  8. Fry roughly 510 minutes, until skin is crisp.
  9. When skin is crisp, return chicken to the pan with the marinade.
  10. Place in the oven and cook for 30 minutes, or until chicken is fully cooked and juices run clear.
  11. Once you plate the chicken, cut the remaining lime into wedges and squeeze a little juice over the chicken.
