Greek Lemon Bars Recipe
- 4 Large eggs
- 13 packs Equal
- 1 teaspoon vanilla
- 1/4 c. oil
- 4 tbsp. lemon juice
- 3/4 c. flour
- 2/3 c. minced walnuts
- 1 tbsp. lemon peel
- GLAZE: 1 package vanilla sugar free pudding made thin.
- Add in 1/4 tsp.
- lemon extract.
- Spread over bars and sprinkle peel on top.
- Beat Large eggs and sweetener on high speed till lemon color.
- Beat in vanilla, oil, and 1/2 of lemon peel, lemon juice and flour.
- Stir in nuts.
- Pour into 7 x 11 inch pan sprayed with Pam.
- Bake at 375 degrees for 25 min.
- Don't over bake.
- Top with glaze.
