Gourmet Chicken Casserole
- 6 oz. pkg. long grain wild rice
- 1 large fryer, cooked and chopped
- 6 green onions, sliced
- 2 Tbsp. oleo
- 1 c. cream of celery soup
- 1 c. mayonnaise
- 1 Tbsp. lemon juice
- 1/2 tsp. Worcestershire sauce
- 8 oz. can water chestnuts
- 8 oz. can sliced mushrooms
- 4 oz. jar sliced pimentos
- 1/2 c. grated cheese
- paprika
- Cook rice according to package directions.
- Saute onions in oleo; add soup, mayonnaise, lemon juice and Worcestershire sauce. Heat and stir until smooth.
- Gently fold in cooked rice, chicken, water chestnuts, mushrooms and pimento.
- Spoon into 9 x 13-inch baking dish.
- Bake at 350u0b0 for 25 minutes.
- Sprinkle with cheese and paprika and bake 5 more minutes or until cheese is melted.
