Broccoli Mushroom Soup - Low Sodium High Flavor Recipe sheloveswine
- 2 Pounds Fresh Broccoli Heads, chopped
- 1 large onion, diced
- 2 cups water
- 2 sticks butter
- 1 cup unbleached flour
- 4 cups of low sodium vegetable broth
- 4 cups half and half
- 8 oz. mushrooms, sliced thin
- 1 heaping teaspoon of minced garlic
- 1 teaspoon crushed, dried tarragon
- 1/2 teaspoon black pepper
- Shredded Parmesan Cheese to garnish (optional)
- This is a very filling soup... serve with a loaf of hot crusty bread.
