Citrus Cheesecake
- Base
- 3/4 cup sweet biscuit crumbs
- 1/4 cup butter, melted
- Filling
- 3 x 250g block PHILADELPHIA Cream Cheese, softened
- 3/4 cup caster sugar
- 2 tablespoons lemon juice Safeway 4 ct For $5.00 thru 02/09
- 2 x 55g eggs, lightly beaten
- 2 tablespoons cornflour
- Topping
- icing sugar
- fresh citrus fruit Whole Foods 5 ea For $5.00 thru 02/09
- Combine biscuit crumbs and butter.
- Press into the base of a 22cm spring form pan; chill.
- Beat Philly* until smooth, add sugar, lemon juice, eggs and cornflour, beat well.
- Pour into prepared crumb crust and bake in oven at 140C for 60 minutes.
- Allow to cool in oven.
- Chill 2 hours.
- Decorate with fresh citrus fruits, dust with icing sugar.
