Simple Shrimp Curry Recipe
- 1 tbsp. oil
- 1 med. onion, finely minced
- 1 teaspoon curry pwdr
- 1 can cream of mushroom soup
- 1 (4-6 ounce.) bag frzn cooked shrimp
- 1 tbsp. minced coriander (cilantro)
- 1 c. raw rice, steamed
- Plain yogurt, optional
- Dry roasted peanuts, optional
- Heat oil in fry pan.
- Saute/fry onion, stirring, till translucent/soft.
- Add in curry.
- Continue frying another 2 min.
- Stir in the undiluted soup.
- Bring to boil, stirring.
- Reduce heat to medium.
- Stir in rinsed, frzn shrimp.
- Heat, stirring, till shrimp are warm.
- Don't boil.
- Spoon into serving bowl.
- Sprinkle with minced coriander.
- Serve over warm steamed rice.
- Provide plain yogurt and dry roasted peanuts as condiments.
