Carrot Fruitcake
- 1 1/2 c. chopped nuts
- 1 c. chopped mixed candied fruit
- 1 c. chopped dates
- 1 c. raisins
- 3 c. all-purpose flour, divided
- 2 c. sugar
- 1 1/2 c. vegetable oil
- 4 eggs
- 2 tsp. baking powder
- 2 tsp. soda
- 3 c. finely chopped carrots
- 1 tsp. salt
- 2 tsp. cinnamon
- Combine nuts, fruit, dates and raisins with 1/2 cup flour; set aside.
- In a large mixing bowl, combine sugar and oil; mix well. Add eggs, one at a time, beating well after each addition. Combine baking powder, soda, cinnamon, salt and remaining flour; gradually add to sugar mixture, beating until smooth.
- Fold in carrots and fruit mixture.
- Spoon into a greased and floured 10-inch tube pan.
- Bake at 350u0b0 for 1 hour and 20 minutes or until cake is done.
- Cool for 15 minutes before removing from pan to cool on a wire rack.
- Yield:
- 12 to 16 servings.
