Carrot Fruitcake

  1. Combine nuts, fruit, dates and raisins with 1/2 cup flour; set aside.
  2. In a large mixing bowl, combine sugar and oil; mix well. Add eggs, one at a time, beating well after each addition. Combine baking powder, soda, cinnamon, salt and remaining flour; gradually add to sugar mixture, beating until smooth.
  3. Fold in carrots and fruit mixture.
  4. Spoon into a greased and floured 10-inch tube pan.
  5. Bake at 350u0b0 for 1 hour and 20 minutes or until cake is done.
  6. Cool for 15 minutes before removing from pan to cool on a wire rack.
  7. Yield:
  8. 12 to 16 servings.
