Vanilla Cheesecake Slice
- Fruit Salad Base
- 1 cup sugar
- 1 cup water
- 1/4 cup lime juice Safeway 3 ct For $1.00 thru 02/09
- 400g canned sliced mango or 1 fresh mango Whole Foods 2 ea For $4.00 thru 02/09
- 2 bananas, sliced lengthwise
- Cheesecake
- 500g block PHILADELPHIA* Light/Regular Cream Cheese, softened
- 200g natural yoghurt
- 1/2 cup caster sugar
- 3 teaspoons gelatine dissolved in
- 1/4 cup boiling water
- 1/2 vanilla bean, seeds only
- Combine sugar, water and lime juice in a small saucepan, stir over heat until sugar is dissolved.
- Bring to the boil and boil rapidly, without stirring for 20 minutes or until syrup is thick; allow to cool.
- Beat Philly*, yoghurt, caster sugar and dissolved gelatine for one minute.
- Cut open lengthwise, the piece of vanilla bean and scrape the seeds out, add them to the Philly* mixture, continue beating for a further minute or until mixture is smooth and seeds are well combined.
- Pour mixture into a plastic wrap lined 21cm x 11cm loaf tin and refrigerate for 2 - 3 hours or until set.
- Serve sliced cheesecake on a bed of mango and banana in lime syrup.
