Vanilla Cheesecake Slice

  1. Combine sugar, water and lime juice in a small saucepan, stir over heat until sugar is dissolved.
  2. Bring to the boil and boil rapidly, without stirring for 20 minutes or until syrup is thick; allow to cool.
  3. Beat Philly*, yoghurt, caster sugar and dissolved gelatine for one minute.
  4. Cut open lengthwise, the piece of vanilla bean and scrape the seeds out, add them to the Philly* mixture, continue beating for a further minute or until mixture is smooth and seeds are well combined.
  5. Pour mixture into a plastic wrap lined 21cm x 11cm loaf tin and refrigerate for 2 - 3 hours or until set.
  6. Serve sliced cheesecake on a bed of mango and banana in lime syrup.
