Tofu Pesto Mayonnaise

• 300 g silken tofu, drained, cubed
• 1 -2 tablespoon bottled basil pesto
• 2 tablespoons white wine vinegar

1. Place all ingredients in food processor.
2. Pulse till smooth.
3. Season to taste.
4. Cover and chill till needed.
