Easy Homemade Chicken Pot Pie

  1. Preheat the oven to 350F.
  2. Start by heating up a pot with olive oil and cook celery and carrots for 5 minutes.
  3. Next add the cooked chicken, peas and salt/pepper to taste.
  4. In a separate saucepan on medium, pour in milk.
  5. Add flour and whisk until a rue forms... its a thicker paste like consistency but should not have any lumps or be so thick that you cant stir it.
  6. Add more milk and flour if needed.
  7. If you mess it up, its ok!
  8. Just start over.
  9. Now, add the rue to the pot pie ingredients and stir to combine until thickened.
  10. Put one of your pie crusts on the bottom of your pie dish.
  11. Add the pie ingredients.
  12. Place the other pie crust on top and mold the crust together to form whatever pretty design you like.
  13. Cut 4-5 slits in the top of the crust so the pie can breathe.
  14. Bake at 350F for about 30-35 minutes depending on your oven.
  15. Enjoy!
