Cheesy Vegetable Beer Soup

  1. Sautee diced vegetables and seasonings in EEOV until tender.
  2. Add beer, broth, frozen broccoli and bring to a boil.
  3. Reduce heat to medium and puree with immersion bender until desired consistency is achieved.
  4. Simmer 5 minutes.
  5. Stir in cheese until well blended.
  6. Add half and half.
  7. Continue to simmer additional 5 -7 minutes.
  8. Serve hot.
