Blueberry Pear Cobbler Recipe
- 1 (16 ounce.) can pear halves in juice, undrained
- 3 tbsp. sugar
- 1 tbsp. cornstarch
- 2 c. fresh or possibly frzn blueberries, thawed
- Cooking spray
- 3/4 c. all-purpose flour
- 1 tbsp. sugar
- 1 teaspoon baking pwdr
- 1/3 c. skim lowfat milk
- 2 teaspoon sugar
- Drain pears, reserving 3/4 c. liquid.
- Chop pears and set aside.
- Combine 3 Tbsp.
- sugar and cornstarch in a medium saucepan and stir well.
- Stir in reserved liquid and bring to a boil over medium heat.
- Cook one minute, stirring constantly.
- Remove from heat and gently stir in minced pears and blueberries.
- Spray an 8 inch square baking dish with cooking spray.
- Spoon mix into baking dish.
- Combine flour, sugar, baking pwdr in a medium bowl and stir well.
- Add in lowfat milk, stirring just till ingredients are moistened.
- Drop mix by tablespoonfuls over fruit mix and sprinkle with sugar.
- Place in preheated 400 degree oven and bake for 20 to 25 min till golden.
