Tomatillo vinagrette
- 1 lb Tomatillos
- 2 tbsp vinegar(preferably white)
- 4 tbsp Canola oil(more or less, adjust to your taste)
- 1/2 tbsp Kosher salt
- 1 Jalepeno(seeded and chopped)
- 1/2 tsp ground black pepper
- Peel the tomatillo skin off(if present) and rinse thoroughly.
- Quarter tomatillos and drop into food processor along with the minced garlic, vinegar and jalepeno.
- Blend ingredients and add oil slowly while doing so, until it is a nice relatively pureed texture.
- Taste dressing, add salt & pepper and blend well, if desired.
