Chicken and Tomato Saute
- 1 1/2 lb. chicken tenders
- 1/2 tsp. salt
- 1/2 tsp. Pepper
- 2 tbsp. butter
- 1 c. pitted prunes
- 1 pt. grape tomatoes
- 1 tbsp. red wine vinegar
- 1/4 c. water
- Cut chicken tenders into 1-inch chunks; sprinkle with 1/2 teaspoon each salt and pepper.
- In 12-inch skillet, melt butter on medium-high.
- Add chicken; cook 2 minutes or until browned.
- Turn chicken over; add prunes, grape tomatoes, vinegar, and water.
- Cook 3 to 4 minutes longer or just until chicken is no longer pink and some tomatoes burst, stirring occasionally.
