Cream of Rice Soup/Chowder
- 1 large onion, chopped
- 1 celery rib, chopped
- 1/4 cup butter
- 1/2 cup all-purpose flour
- 4 cup chicken broth
- 3 cup cooked rice
- 1 cup cooked cubed chicken
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1 cup evaporated milk
- pinch of parsley
- In a large saucepan, saute the onion and celery in butter until tender
- Stir in flour until well blended
- Gradually add chicken broth
- Stir in rice, chicken, salt and pepper
- Bring to a boil over medium heat; cook and stir until thickened.
- Stir in evaporated milk.
- Cook about another 5 minutes
- Stir in parsley
- All done & Enjoy!!
