Spice-Rubbed Pork Tenderloin
- 1 tbsp. curry powder
- 1 tsp. ground cumin
- 3/4 tsp. salt
- 1/4 tsp. ground cinnamon
- 2 tsp. vegetable oil
- 1 pork tenderloin
- Preheat broiler.
- In cup, combine curry powder, cumin, salt, cinnamon, and oil; use to rub on tenderloin.
- Place tenderloin on rack in broiling pan.
- Place pan in broiler 5 to 7 inches from heat source.
- Broil tenderloin, turning once, until meat thermometer inserted in center of pork reaches 155 degrees F, 15 to 20 minutes.
- Internal temperature will rise to 160 degrees F upon standing.
- Place meat on cutting board.
- Let stand 5 minutes to set juices for easier slicing.
- With knife held in slanting position, almost parallel to board, cut tenderloin into 1/4-inch-thick slices.
