Layered Casserole
- 1 lb. ground turkey breast or chicken breast
- 3/4 c. onion, chopped
- 1/2 green pepper, chopped
- 1 c. 1% cottage cheese
- 1 (8 oz.) can tomato sauce
- 3 Tbsp. lite sour cream
- 6 Tbsp. lite cream cheese
- 1 tsp. salt
- 1/2 c. fat-free cheese
- 3 c. cooked pasta, drained
- black pepper to taste
- Preheat oven to 350u0b0.
- Brown meat and onion in large skillet sprayed with nonstick cooking spray.
- Add tomato sauce and seasonings.
- Simmer 7 to 8 minutes.
- In large bowl, combine green pepper, cottage cheese, cream cheese and sour cream.
- Mix thoroughly.
- Spray a large casserole dish (9 x 13-inch) with nonstick cooking spray.
- Cover bottom with pasta.
- Add a layer of meat mixture.
- Pour cottage cheese mixture for next layer and top with shredded fat-free cheese.
- Bake, uncovered, at 350u0b0 for 30 to 40 minutes.
