Mini Meatloaves

  2. Preheat oven to 450.
  3. Spray 6 cup muffin tin with Pam.
  4. 2.
  5. Crumble bread in food processor.
  6. Set aside.

  8. Feed shallot through food processor, then baby spinach.
  9. 4.
  10. Add bread crumbs back in, along with chicken, cheese, egg, salt, and pepper.
  11. Pulse till well mixed.
  12. 5.
  13. Fill each muffin tin with 1/2 cup of mixture.
  14. 6.
  15. Bake till thermometer reads 165, approximately 30 minutes.
  16. 7.
  17. Garnish with BBQ sauce or ketchup.
