Mini Meatloaves
- 1 slice Bread, Torn Into Pieces
- 1 whole Shallot, Quartered
- 2 cups Baby Spinach
- 1 pound Ground Chicken, Turkey, Or Beef
- 1/4 cups Grated Parmesan Cheese
- 1 whole Large Egg
- 1/2 teaspoons Smoked Paprika
- 1/2 teaspoons Salt
- 1/2 teaspoons Coarsley Ground Black Pepper
- 6 Tablespoons BBQ Sauce (or Ketchup)
- 1.
- Preheat oven to 450.
- Spray 6 cup muffin tin with Pam.
- 2.
- Crumble bread in food processor.
- Set aside.
- 3.
- Feed shallot through food processor, then baby spinach.
- 4.
- Add bread crumbs back in, along with chicken, cheese, egg, salt, and pepper.
- Pulse till well mixed.
- 5.
- Fill each muffin tin with 1/2 cup of mixture.
- 6.
- Bake till thermometer reads 165, approximately 30 minutes.
- 7.
- Garnish with BBQ sauce or ketchup.
