Done in a Flash! New Potatoes Stir-Fried with Butter-Curry Seasoning

  1. Slice the new potatoes into matchsticks.
  2. Slice the sausages into thin diagonal pieces.
  3. Heat the butter, olive oil, and garlic in a frying pan over medium heat, then stir-fry the potatoes.
  4. When all ingredients are coated evenly in oil, and when the potatoes are tender, add sausage slices and continue frying.
  5. Cover with a lid, and steam for 5 minutes, removing the lid now and then to turn the potatoes and sausage to brown them evenly.
  6. Add the curry powder, salt, pepper to taste, sprinkle with dried parsley, and serve.
