Pepperoni salad with marbled tea eggs
- 3 large marbled tea eggs, see attached recipe
- 1/4 lb pepperoni
- 2/3 cup ripened black olives
- 1 large cucumber
- 1/4 cup grated parmesan cheese
- 1/2 cup chopped walnuts
- 1 large kosher dill pickle, diced
- 1/3 cup dried cherries
- 1 head iceberg lettuce
- 1/2 cup seedless grapes , I used red grapes
- 1/4 cup kosher dill pickle juices
- 1 salt and pepper
- 1/4 tsp whole leaf oregano
- 1/4 cup chive oil
- 1/4 tsp sweet basil
- 1/4 cup mayonnaise
- Slice the eggs, olives and cherries.
- Set aside.
- Peel and remove seeds from the cucumber.
- set aside.
- Dice pickle.
- Remove casing.Slice the pepperoni thinly on a bias.
- Slice the lettuce.
- Layer all the ingredients for salad together.
- Mix all the ingredients of dressing together.
- Add to salad serve, hope you enjoy!
