Portuguese Kale Soup Recipe
- 2 med. onions, minced
- 2 cloves garlic, chopped
- 2 potatoes, diced
- 2-3 carrots, diced
- 1/2 head cabbage, minced
- Bunch of kale, minced
- 3/4 pound linguine, sliced
- 16 ounce. can white kidney beans
- 30 ounce. can Pastene grnd peeled tomatoes
- 46 ounce. can chicken broth
- Salt & pepper to taste
- Saute/fry onion and garlic in extra virgin olive oil.
- Add in diced potatoes, cabbage, carrots and half of the can of chicken broth.
- Cook till almost tender.
- Then add in linguine and kale, the rest of the broth and the canned tomatoes.
- Simmer 10-15 min.
- Season to taste.
