Salty & Sweet Chocolate Peanut Butter Icebox Dessert
- 1 cup Land O Lakes Half & Half
- 1 (3.4-ounce) package vanilla instant pudding and pie filling mix
- 1 1/2 cups Land O Lakes Heavy Whipping Cream
- 1/2 cup powdered sugar
- 1/2 cup creamy peanut butter
- 1/2 cup Land O Lakes Half & Half
- 1 (12-ounce) package real semi-sweet chocolate chips
- 60 buttery round crackers
- 3 (1.5-ounce) peanut butter cup candy bars, chopped
- Combine 1 cup half & half and pudding mix in bowl; beat with whisk until smooth.
- Combine whipping cream and powdered sugar in bowl; beat until stiff peaks form.
- Add pudding mixture and peanut butter.
- Gently stir until smooth.
- Place 1/2 cup half & half and chocolate chips in bowl.
- Microwave, stirring every 20-30 seconds, until smooth.
- Spread 1/2 cup mousse into 7-inch circle on serving plate.
- Place 7 crackers around edge on mousse; place 3 crackers in middle.
- Spread with 2/3 cup mousse.
- Layer 10 additional crackers around edge and middle, staggering second layer over first layer.
- Spread with 2/3 cup mousse.
- Spread 1/4 cup ganache over mousse.
- Repeat layering 4 more times; top with remaining ganache.
- Garnish with chopped peanut butter cup candy bars.
- Refrigerate at least 5 hours or overnight.
