Salty & Sweet Chocolate Peanut Butter Icebox Dessert

  1. Combine 1 cup half & half and pudding mix in bowl; beat with whisk until smooth.
  2. Combine whipping cream and powdered sugar in bowl; beat until stiff peaks form.
  3. Add pudding mixture and peanut butter.
  4. Gently stir until smooth.
  5. Place 1/2 cup half & half and chocolate chips in bowl.
  6. Microwave, stirring every 20-30 seconds, until smooth.
  7. Spread 1/2 cup mousse into 7-inch circle on serving plate.
  8. Place 7 crackers around edge on mousse; place 3 crackers in middle.
  9. Spread with 2/3 cup mousse.
  10. Layer 10 additional crackers around edge and middle, staggering second layer over first layer.
  11. Spread with 2/3 cup mousse.
  12. Spread 1/4 cup ganache over mousse.
  13. Repeat layering 4 more times; top with remaining ganache.
  14. Garnish with chopped peanut butter cup candy bars.
  15. Refrigerate at least 5 hours or overnight.
