Black Beans And Rice
- 1 lb. black beans
- 1/4 lb. ham for seasoning
- 1 large onion, chopped
- 1 clove garlic, minced
- 2 green peppers, chopped
- 1 bay leaf
- 1/8 tsp. oregano
- 1 tsp. salt
- 3 to 4 c. cold water
- 2 pkg. yellow rice
- chopped green onions, fat-free sour cream and tomato for garnish (optional)
- Wash beans thoroughly.
- Cover with water and put in large pot to soak overnight.
- Drain beans and place in crock-pot with 3 to 4 cups of water.
- Add all other ingredients, except the rice.
- Cook on high for 1 hour, then cook 8 to 10 hours on low.
- Remove bay leaf.
- Cook rice according to directions on package.
- Serve beans over rice.
- Garnish as desired.
- This is a low-fat, high fiber meal.
