Black Beans And Rice

  1. Wash beans thoroughly.
  2. Cover with water and put in large pot to soak overnight.
  3. Drain beans and place in crock-pot with 3 to 4 cups of water.
  4. Add all other ingredients, except the rice.
  5. Cook on high for 1 hour, then cook 8 to 10 hours on low.
  6. Remove bay leaf.
  7. Cook rice according to directions on package.
  8. Serve beans over rice.
  9. Garnish as desired.
  10. This is a low-fat, high fiber meal.
