Italian Stir-Fry
- 1 12 lbs sweet Italian sausage or 1 12 lbs hot Italian sausage
- 1 large red onion, sliced
- 1 large red pepper, chopped
- 1 garlic clove, chopped
- 1 lb Italian cut green beans, thawed or 1 lb fresh green beans, trimmed
- 14 cup red wine vinegar
- 14 teaspoon oregano (dried or fresh )
- 14 teaspoon basil (dried or fresh)
- your favorite type Italian cheese, to your taste
- In a large pan, cook sausages on all sides, pricking to allow juices to flow out.
- Cook till done, or around 15 minutes.
- Remove from pan and cool.
- Add onion, pepper, and garlic to the drippings in the pan.
- Saute this for about 5 minutes.
- Stir in the green beans and cook on high heat for about 5 - 7 minutes, til tender but slightly crisp.
- Meanwhile, cut sausage into thick slices and return to pan along with the vinegar, oregano and the basil.
- Stir over high heat for around 5 minutes, and season with salt to taste.
- Serve with cooked pasta and any favorite Italian cheese, parmesean, fontina, mozarella -- .
