Herb Dijon Crusted Pork Tenderloin

  1. Heat oven to 425 degrees F. Line a rimmed baking sheet with nonstick foil.
  2. In a small bowl, mix garlic, olive oil, thyme, rosemary, salt and pepper.
  3. Brush both tenderloins with the Dijon mustard.
  4. Rub the pork with herb mixture.
  5. Place on prepared pan.
  6. Roast pork 30 minutes until crust is golden and instant-read thermometer inserted into center registers 160 degrees F. Let pork rest 5 minutes; slice and serve.
