Potato Pancakes
- 5 lbs russet potatoes, peeled
- 1 medium onion
- 3 eggs
- 2 12 cups pancake mix
- 1 tablespoon garlic, minced
- 2 teaspoons salt
- 1 teaspoon pepper
- canola oil
- Using a food processor, grate potatoes and onion.
- Do not drain water.
- In a bowl, beat eggs.
- Stir in potato and onion.
- Add pancake mix, minced garlic, salt and pepper.
- Stir until well blended.
- Heat 1 tablespoon oil in large frying pan.
- Spoon 3 tablespoon sized portions of potato mixture into hot frying pan.
- Fry 3 to 4 minutes on each side.
