Warm Rice & Olive Salad
- 4 green onions
- 1 clove garlic, very fine chopped
- 1 red bell pepper
- 1 small can sliced black olives
- 12 cherry tomatoes
- 4 tbsp flat leaf parsley, chopped
- 3/4 tsp cumin
- 1 salt and pepper to taste
- 2 tbsp olive oil
- 3 cup cooked & cooled (but still warm)long grain white rice
- 1 juice from half of a lemon
- 3/4 tsp mild chili power
- set cooked cooled but still warm rice to the side.
- dice red pepper.
- chop green onion.
- in a skillet or pot add oil, onion, olives, red pepper, chili powder, cumin, garlic and lemon juice.
- turn heat on high and cook for only 3 minutes until hot and parsley gets soft and wilted
- meanwhile quarter the tomatoes.
- add to pot\killet.
- saute for another minute until tomatoes are just warm.
- turn off heat and add rice.
- toss to coat.
- pour into serving bowl.
- serve.
- great served with fajitas!

- serves about 4-5.
