sig's Deep-fried Bananas in Almond Batter
- 115 grams /4 oz/ 1 cup.plain flour
- 2 .5 ml/ 1/2 teaspoon bicarbonate of soda (baking soda)
- 1 pinch salt
- 30 ml / 2 tablespoon granulated sugar
- 90 ml / 6 tablespoon of water
- 1 large egg
- 30 ml / 2 tablespoon of ground.almonds or slivers of coconut
- 4 firm bananas
- 1 deep pan,with vegetable oil for deep- frying
- 1 small handful of fresh mint leaves
- 30 ml / 2 tablespoon clear,runny honey
- sift flour ,bicarbonate of soda and salt into large bowl
- stir in the sugar and the egg
- whisk in just enough water to make a thin batter
- add the almonds or coconut and mix well
- peel bananas ,half lengthways ,then cut in half crossways to make 16 pieces, do this only when ready to fry ,as bananas can discolour quick
- heat oil to high temperature, a cube of bread should brown in 45 seconds
- dip the banana pieces in the batter ,gently drop them into the oil ,a few at the time,fry until golden.brown
- drain on kitchen paper , to serve drizzle with honey and decorate with mint leaves
