John Madden's Barbecue Beef Sandwiches
- 3 lb. beef chuck roast, cooked, cooled and shredded
- 2 onions, chopped
- 2 tbsp. butter
- 2 cloves garlic, minced
- 1/2 cup minced celery
- 1-1/2 cup water
- 1/2 tsp. dry mustard
- 2 cups ketchup
- 3 tbsp. apple cider vinegar
- 3 tbsp. Worcestershire sauce
- 4 tbsp. brown sugar
- 1/4 tsp. paprika
- 1 tsp. Tabasco sauce
- 1/2 tsp. black pepper (I prefer a little more)
- 2 tsp. salt
- 1-1/2 tsp. chili powder
- In a large saucepan or small soup pot, brown onions in butter until tender.
- Add all other ingredients including cooked and shredded beef.
- Cover and cook over low heat for at least 2 hours, uncovering for the last 1/2 hour or so.
- This can also be done in a crock pot on low heat for 6 to 8 hours.
- Serve on buns or rolls.
