Sarah'S Stuffed Manicotti
- 12 manicotti shells
- 1 (16 oz.) pkg. sausage (Jimmy Dean with sage)
- 1 (24 oz.) carton cottage cheese
- 2 eggs
- 2 pkg. frozen spinach (20 oz.)
- 1 jar Classico tomato and basil sauce
- 1 lb. fresh Mozzarella
- Thaw, cook and drain spinach and place in large mixing bowl. Fry and crumble sausage; drain.
- Mix with spinach.
- Mix cottage cheese and slightly beaten eggs with spinach and sausage mix and set aside.
- Add manicotti shells to boiling water; stir occasionally until shells are still a little hard (3 to 5 minutes).
- Drain.
- Pour enough sauce to cover bottom of 10 x 14-inch baking dish.
- Stuff each shell with sausage mix and place in baking dish in rows; not on top of each other.
- Pour remaining sauce over shells and sprinkle with grated cheese.
- Place in preheated oven, 400u0b0, and bake for 45 minutes covered until sauce bubbles and cheese melts.
- This doubles well and is even better leftover.
