My Crab Cakes
- 1 lb jumbo lump crab
- 1/4 cup red bell pepper, chopped
- 1/4 cup scallions, chopped
- 1 egg
- 1/2 tsp old bay seasoning
- 1/8 tsp cayenne pepper
- 1 tbsp dijon mustard
- 1/4 tsp worcestershire sauce
- 1/2 cup mayonnaise
- 3/4 cup plain breadcrumbs
- 2 tbsp olive oil, extra virgin
- Mix everything together in a big bowl (add crab last), form into patties.
- You can make 4 large or 8 average size patties.
- Pan fry cakes in oil, turning once.
