Poor Man'S Fruitcake

  1. Measure first 8 ingredients into a large saucepan and simmer together over low heat for 5 minutes.
  2. Cool.
  3. Sift flour, baking powder and baking soda together.
  4. Add to first mixture.
  5. Fold in nuts and candied fruit.
  6. Pour into 2 loaf pans that have been greased and lined with wax paper or into a prepared tube pan. Bake at 350u0b0 for 1 to 1 1/4 hours, until cake tests done.
  7. If raisins and fruit on top of cake begin to brown too much, cover with foil.
  8. Serve plain or frosted or with a hard sauce or lemon sauce.
