Poor Man'S Fruitcake
- 1 lb. box seedless raisins
- 1 c. light brown sugar
- 1/2 tsp. ground cloves
- 3 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/3 c. solid shortening
- 1/2 tsp. salt
- 2 c. water
- 3 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 c. coarsely chopped nuts
- 1 c. candied fruit (optional)
- Measure first 8 ingredients into a large saucepan and simmer together over low heat for 5 minutes.
- Cool.
- Sift flour, baking powder and baking soda together.
- Add to first mixture.
- Fold in nuts and candied fruit.
- Pour into 2 loaf pans that have been greased and lined with wax paper or into a prepared tube pan. Bake at 350u0b0 for 1 to 1 1/4 hours, until cake tests done.
- If raisins and fruit on top of cake begin to brown too much, cover with foil.
- Serve plain or frosted or with a hard sauce or lemon sauce.
