Peanut Butter Soup In A Jiffy Recipe
- 3 tbsp. butter
- 1 med. carrot, minced
- 1 teaspoon curry & garlic pwdr
- 4 c. vegetable stock
- 2 tbsp. catsup
- 1 c. cooked brown rice
- 1/2 c. minced peanuts
- 1 sm. onion, minced
- 1 stalk celery, minced
- 2 tbsp. whole wheat flour
- 1/2 c. chunk peanut butter
- 2 teaspoon Worcestershire
- 1/2 c. lowfat sour cream
- 2 tbsp. green onion, minced
- In a large saucepan over medium heat, heat butter.
- Add in onion, carrot and celery; cook 10 min, stirring occasionally.
- Stir in curry and garlic powders and cook for 1 minute.
- Stir in flour and cook for another minute.
- Gradually stir in stock.
- Reduce heat, cover and simmer for 15 min.
- Stir in peanut butter, catsup and Worcestershire till smooth.
- Add in rice and simmer for 5 min.
- Garnish each serving with a spoonful of lowfat sour cream, peanuts and a sprinkle of green onion.
- Makes 4 servings.
