Peanut Butter Soup In A Jiffy Recipe

  1. In a large saucepan over medium heat, heat butter.
  2. Add in onion, carrot and celery; cook 10 min, stirring occasionally.
  3. Stir in curry and garlic powders and cook for 1 minute.
  4. Stir in flour and cook for another minute.
  5. Gradually stir in stock.
  6. Reduce heat, cover and simmer for 15 min.
  7. Stir in peanut butter, catsup and Worcestershire till smooth.
  8. Add in rice and simmer for 5 min.
  9. Garnish each serving with a spoonful of lowfat sour cream, peanuts and a sprinkle of green onion.
  10. Makes 4 servings.
