Simple Spinach with Sesame Seeds
- 1 bunch Spinach
- 3 tbsp Ground black sesame seeds
- 2 tsp Sake
- 1 to 2 tablespoons Sugar
- 1 tbsp Soy sauce
- Carefully rinse the spinach, immerse in boiling water, parboil briefly, then dunk in chilled water.
- Once the spinach cools, squeeze out the excess water, then chop into 3-5 cm lengths.
- Combine the ingredients, add chopped spinach and toss, then serve.
- Here's a tip!
- The oxalic acid that produces the bitterness of the spinach disappears when parboiled.
- Apparently, if you take in a large amount of oxalic acid, it can accumulate in your body and bind with calcium, so you may become at risk of stone formation or osteoporosis, but...
- ...there's no way you can consume massive amounts of spinach at one time, and by simply parboiling it in a generous amount of water, you'll be fine!
