Bean & Ham Salad Recipe

  1. Rinse and sort beans.
  2. Bring to boil and soak 1 hour.
  3. Rinse.
  4. Add in water to cover at least 1 inch.
  5. Bring to boil, skimming scum which forms, cover and cook till tender.
  6. Add in salt toward end of cooking but do not over cook.
  7. Drain beans, transfer to mixing bowl and while warm, add in 1 c. garlic-mustard dressing.
  8. Add in onion, parsley and ham and pepper; toss again.
  9. Cover and chill.
  10. Allow salad to come to room temperature to serve.
  11. Garnish with black olives.
  12. 6 to 8 portions.
