Low-Fat Strawberry Yogurt Pie

  1. In blender, puree enough strawberries to equal 3/4 cup. Reserve remaining berries for garnish.
  2. In medium saucepan, mix unflavored gelatin with 1/4 cup sugar.
  3. Blend in egg yolks, beaten with milk.
  4. Let stand 1 minute.
  5. Stir over low heat until gelatin is completely dissolved (about 5 minutes).
  6. With wire whisk or rotary beater, blend in pureed strawberries, yogurt, lemon juice and food coloring.
  7. Chill, stirring occasionally, until mixture mounds slightly when dropped from a spoon.
