Roast Opossum With Vegetables
- 1 opossum, dressed
- salt and pepper
- 1 onion, chopped
- vegetable oil
- 1 c. bread cubes
- 1/2 tsp. Worcestershire sauce
- 1 tsp. garlic powder
- sage
- bacon slices
- 3 potatoes, peeled
- 2 carrots, halved
- 3 small onions
- Salt and pepper the opossum.
- Saute chopped onion in vegetable oil.
- Add bread cubes, Worcestershire sauce, garlic powder and some sage to taste.
- Add some water and mix thoroughly.
- Stuff the opossum cavity with this stuffing and sew up.
- Place on a rack in a roasting pan and place bacon strips across the back.
- Roast, uncovered, at 350u0b0 for 1 1/2 hours.
- Place vegetables around the opossum, salt and pepper to taste and roast an additional hour or until the meat and carrots are tender.
