Aunt Pearl'S Favorite Sugar Cookies
- 1 c. butter or oleo
- 1 c. sugar
- 2 eggs
- 2 tsp. grated lemon rind
- 3 c. cake flour
- 1/2 tsp. soda
- 1/2 tsp. salt
- Cream butter and sugar until light and fluffy.
- Add 1 egg and 1 egg yolk; beat well.
- Add lemon rind.
- Sift flour with soda and salt.
- Gradually add to creamed mixture, working in flour with hands as dough stiffens.
- Wrap in wax paper.
- Chill thoroughly. Roll out part of dough at a time to 1/8-inch thickness on a lightly floured board or pastry cloth.
- (Refrigerate remainder.) Cut in desired shapes with small cookie cutters.
- Dilute remaining egg white with a very small amount of water.
- Brush on cookies.
- Decorate as desired.
- Bake at 400u0b0 for about 8 minutes or until lightly browned.
- Yields about 5 dozen.
