Shrimp Scampi
- 1 to 1 1/2 lb. shrimp (fresh or frozen), shelled and deveined
- 6 Tbsp. butter or margarine
- 1 Tbsp. green onions, chopped
- 4 garlic cloves, minced
- 1/4 to 1/2 tsp. lemon peel, shredded
- 1 Tbsp. lemon juice
- 1/4 tsp. salt
- dash of bottled hot pepper sauce
- rice, hot and cooked
- parsley, chopped
- lemon peel, shredded
- Thaw
- shrimp,
- if
- frozen.
- Remove
- shells
- and devein. Gently pat
- dry with a paper towel.
- In a large skillet, melt butter over medium heat; add onions, garlic, lemon peel, lemon juice, salt
- and hot pepper sauce.
- Cook until boiling point, addthrimp and cook for about 5 minutes or until shrimp turns pink.
- Serve with hot cooked rice, top with parsley and lemon peel.
- Yield: 4 servings.
