Quick Couscous Salad
- 2 cups Miracle Whip Calorie-Wise Spread Family Dollar $3.50 thru 02/07
- 1 cup plain 2% or low fat yogurt
- 4 tsp. ground cumin
- 1 qt. couscous, cooked, cooled
- 4 each medium red peppers, cut into strips
- 4 each small red onions, thinly sliced, separated into rings
- 2 cups chickpeas (garbanzo beans), drained, rinsed
- 1-1/3 cups slivered or sliced almonds, toasted
- 1-1/3 cups fresh parsley, chopped
- 1-1/3 cups raisins
- - freshly ground black pepper, to taste
- Beat Miracle Whip, yogurt and cumin in large bowl with wire whisk until well blended.
- Add remaining ingredients; mix lightly.
- Cover.
- Refrigerate several hours or until chilled.
