Greek Walnut and Olive Oil Cake

  1. Heat the oven to 350F (180C).
  2. In a large bowl, add the flour, sugar, baking powder, allspice, cinnamon and ground walnuts, whisk until well combined.
  3. Whisk the eggs into the dry ingredients, 1 at a time, then add the milk, vinegar and olive oil.
  4. Whisk just until thoroughly incorporated.
  5. Transfer the batter to a 13-by-9-inch pan coated with cooking spray.
  6. Bake the cake on the center rack of the oven until puffed and golden and a toothpick inserted comes out clean, 35 to 45 minutes.
  7. Transfer the pan on a wire rack, let cool.
  8. Slice on the diagonal into diamond shapes.
  9. Serve with whipped cream if needed.
